Instructions
- Hard boil the eggs by covering them with cold water in a pot. Bring to a boil over medium heat, then cover and turn off the heat. Let sit for 12 minutes before cooling in ice water.
- Once cooled, peel the eggs and slice each in half lengthwise. Scoop out the yolks into a bowl.
- Mash yolks until smooth and mix in mayonnaise, Dijon mustard, curry powder, salt, and pepper until well combined.
- Fill each egg white half with the yolk mixture using a spoon or piping bag.
- Top with chopped green onions and sprinkle paprika for garnish.
