  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tbsp capers, rinsed
  • 1/2 cup fresh lemon juice (about 2 lemons)
  • 1 cup low-sodium chicken broth
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • Salt & pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. In a skillet over medium heat, add olive oil and sear chicken until golden brown, about 3-4 minutes per side.
  3. Add minced garlic and capers; cook until fragrant (30 seconds).
  4. Transfer ingredients to the crockpot and pour in chicken broth and lemon juice.
  5. Cook on low for 6-7 hours or high for 3-4 hours.
  6. Before serving, sprinkle fresh parsley on top for added flavor.
