  • 4 cups cooked day-old jasmine rice
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • 3 large eggs, whisked
  • ¼ cup low-sodium soy sauce
  • 2 green onions, chopped
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. On a large sheet pan, drizzle oil and sauté minced garlic and ginger for 2-3 minutes until fragrant.
  3. Add mixed vegetables and cooked rice; stir well to combine.
  4. Drizzle soy sauce over the mixture and stir until the rice absorbs the flavor.
  5. Push the rice mixture to one side, scramble the eggs in the empty space until set, then mix everything together.
  6. Sprinkle green onions and sesame oil over the mixture before returning to the oven for an additional 5-10 minutes.
