Easy Lo Mein is a delicious and quick dish perfect for busy weeknights. With soft lo mein noodles coated in a savory sauce, paired with vibrant veggies and your choice of protein, this recipe guarantees a satisfying meal that will have everyone coming back for seconds.


Ingredients

  • 8 oz lo mein noodles
  • 2 tbsp vegetable oil (or sesame oil)
  • 1 cup bell peppers, sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 1 cup cooked chicken, shrimp, or tofu
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp oyster sauce (or mushroom-based for vegetarian)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated

Instructions

  1. Prepare all ingredients by chopping veggies and protein into bite-sized pieces.
  2. Boil a large pot of salted water and cook lo mein noodles according to package instructions until tender but chewy. Drain and set aside.
  3. In a large skillet over medium-high heat, add vegetable oil and sauté the chopped vegetables until tender-crisp.
  4. If using pre-cooked protein, add it to the pan just long enough to warm through; if raw, ensure it's fully cooked.
  5. In a bowl, mix soy sauce, oyster sauce, garlic, and ginger. Pour over the sautéed ingredients in the skillet.
  6. Add the cooked lo mein noodles to the skillet and toss everything together until well-coated.
  7. Serve hot, garnished with green onions or sesame seeds if desired.
