- 2 tbsp vegetable oil (or sesame oil)
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup snap peas
- 1 cup cooked chicken, shrimp, or tofu
- 3 tbsp low-sodium soy sauce
- 2 tbsp oyster sauce (or mushroom-based for vegetarian)
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
Instructions
- Prepare all ingredients by chopping veggies and protein into bite-sized pieces.
- Boil a large pot of salted water and cook lo mein noodles according to package instructions until tender but chewy. Drain and set aside.
- In a large skillet over medium-high heat, add vegetable oil and sauté the chopped vegetables until tender-crisp.
- If using pre-cooked protein, add it to the pan just long enough to warm through; if raw, ensure it's fully cooked.
- In a bowl, mix soy sauce, oyster sauce, garlic, and ginger. Pour over the sautéed ingredients in the skillet.
- Add the cooked lo mein noodles to the skillet and toss everything together until well-coated.
- Serve hot, garnished with green onions or sesame seeds if desired.
