  • 2 large eggs (room temperature)
  • 1 cup whole milk
  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 2 tsp pure vanilla extract
  • 1/2 cup brown sugar (for topping)
  • 1/2 cup old-fashioned oats (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, sugar, cinnamon, and salt.
  3. In another bowl, mix melted butter, eggs, milk, and vanilla until smooth.
  4. Pour wet ingredients into dry ingredients and fold gently until just combined.
  5. For the topping, mix brown sugar, oats, cinnamon, and softened butter until crumbly.
  6. Pour half the batter into the prepared pan and sprinkle half of the topping mixture over it. Add remaining batter and top with the rest of the crumbs.
  7. Bake for 30-35 minutes or until golden brown; check doneness with a toothpick.
