Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a springform pan.
  2. Bake the crust for 8–10 minutes until lightly golden. Allow it to cool.
  3. In a large bowl, beat the softened cream cheese until smooth. Gradually add sugar and mix well.
  4. Blend in sour cream, lemon juice, lemon zest, and vanilla extract until combined.
  5. Add eggs one at a time on low speed to prevent overmixing.
  6. Pour filling into the cooled crust and smooth the top. Bake for 50–60 minutes until set around edges but slightly jiggly in the center.
  7. Let cool gradually in the oven with the door ajar for about an hour before refrigerating for at least four hours or overnight.
