Instructions

  3. In another bowl, beat eggs and mix in milk, melted coconut oil (or butter), and lemon zest until smooth.
  4. Gradually combine wet ingredients into dry ingredients, stirring gently until just combined.
  5. Fold in the mixed berries carefully to avoid smashing them.
  6. Scoop batter into muffin cups, filling each about three-quarters full.
  7. Bake for 18-20 minutes or until golden brown; check doneness with a toothpick.
