  • 8 oz fusilli or penne pasta
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh burrata cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add pasta and cook until al dente (about 8–10 minutes). Drain and cool slightly.
  2. Prepare Broccoli: In another pot, bring water to a boil. Blanch broccoli for 2–3 minutes until bright green. Drain and plunge in ice water.
  3. Mix Dressing: Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
  4. Toss Together: In a large bowl, combine cooled pasta, blanched broccoli, cherry tomatoes, and torn burrata. Drizzle with dressing and gently toss to coat.
  5. Serve: Transfer to a serving platter or bowls; add extra olive oil if desired.
