  • ¼ cup fresh parsley (chopped)
  • 3 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • ½ tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and combine it with vegetable broth in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until liquid is absorbed. Fluff with a fork.
  2. Preheat the oven to 425°F (220°C). Chop your vegetables into bite-sized pieces and spread them on a lined baking sheet.
  3. Drizzle olive oil over the veggies; sprinkle with garlic powder, salt, and pepper. Toss to coat evenly.
  4. Roast vegetables for 20-25 minutes until tender and caramelized, stirring halfway through.
  5. In a large bowl, combine cooked quinoa and roasted vegetables. Squeeze lemon juice over the top and add chopped herbs; toss gently to mix.
