Ingredients

  • 4 whole wheat tortillas
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 cup crumbled feta cheese
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Rinse the chickpeas under cold water until clear.
  2. Slice the red onion thinly and halve the cherry tomatoes.
  3. In a large bowl, combine chickpeas, feta cheese, spinach, cherry tomatoes, red onion, olive oil, lemon juice, garlic powder, salt, and pepper. Mix gently.
  4. Lay out tortillas and spoon the chickpea mixture onto each one.
  5. Fold in the sides of each tortilla and roll tightly.
  6. Heat a skillet over medium heat and cook wraps seam-side down for about 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes until crispy.
