- 4 whole wheat tortillas
- 1 can (15 oz) chickpeas, rinsed and drained
- 1 cup crumbled feta cheese
- 2 cups fresh baby spinach
- 1 cup cherry tomatoes, halved
- 1/4 red onion, thinly sliced
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Rinse the chickpeas under cold water until clear.
- Slice the red onion thinly and halve the cherry tomatoes.
- In a large bowl, combine chickpeas, feta cheese, spinach, cherry tomatoes, red onion, olive oil, lemon juice, garlic powder, salt, and pepper. Mix gently.
- Lay out tortillas and spoon the chickpea mixture onto each one.
- Fold in the sides of each tortilla and roll tightly.
- Heat a skillet over medium heat and cook wraps seam-side down for about 3-4 minutes until golden brown. Flip and cook for another 3-4 minutes until crispy.
