  • 8 oz fusilli or penne pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. 1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for about 6-7 minutes on each side until golden brown and cooked through. Let rest before slicing.
