  • 8 lasagna noodles (regular or no-boil)
  • 1 lb chicken sausage (sweet or spicy)
  • 1 cup ricotta cheese (whole milk)
  • 2 cups shredded mozzarella cheese
  • 2 cups marinara sauce (homemade or store-bought)
  • 2 cups fresh spinach (baby spinach preferred)
  • ¼ cup grated Parmesan cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 large egg
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Boil lasagna noodles until al dente, then drain and set aside.
  2. In a bowl, mix ricotta, crumbled chicken sausage, spinach, egg, salt, pepper, oregano, and half the mozzarella until combined.
  3. Spread about three tablespoons of filling on each noodle and roll tightly. Place seam side down in a greased baking dish.
  4. Pour marinara sauce over the rolls and top with remaining mozzarella.
  5. Bake uncovered for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
