  • 1 cup carrots, grated (about 2 medium)
  • 3 scallions, thinly sliced
  • ¼ cup low-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 tablespoons toasted sesame seeds

Instructions

  1. Finely shred the green cabbage using a sharp knife or mandoline slicer.
  2. Grate the carrots and chop the scallions into thin slices.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey until well combined.
  4. In a large bowl, combine the cabbage, carrots, and scallions. Drizzle half of the dressing over the vegetables and toss well to coat.
  5. Sprinkle toasted sesame seeds on top just before serving and add remaining dressing if needed.
  6. For best flavor, chill in the fridge for 15–30 minutes before serving.
