  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 2 cloves fresh garlic, minced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 oz diced green chiles (1 can)
  • 2 tbsp taco seasoning
  • 1 cup sour cream
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, bring water to a simmer and cook chicken breasts until no longer pink (15-20 minutes). Remove and shred.
  3. In a large bowl, mix shredded chicken with cream cheese, garlic, green chiles, sour cream, taco seasoning, and half of the shredded cheeses until well combined.
  4. Transfer to a baking dish, top with remaining cheese, and bake for about 20 minutes or until golden and bubbly.
  5. Garnish with cilantro if desired and serve with tortilla chips or veggies.
