  • 1 cup cooked jasmine rice
  • 200g extra-firm tofu, cubed
  • 1 ripe avocado, sliced
  • 2 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 green onions, chopped
  • 1 cup mixed vegetables (bell peppers, broccoli)

Instructions

  1. Prepare the rice according to package instructions and set aside.
  2. Press the tofu to remove excess moisture, then cube.
  3. Heat a pan over medium heat with a splash of oil. Add tofu and cook until golden brown on all sides (8-10 minutes).
  4. Drizzle soy sauce over tofu during the last minute of cooking.
  5. If using vegetables, sauté them in the same pan for about 3-4 minutes until tender but vibrant.
  6. In bowls, layer cooked rice, top with crispy tofu and veggies.
  7. Add sliced avocado on top and finish with chopped green onions and sesame oil.
