Ingredients

  • 4 cups ripe tomatoes, diced (or 2 cans of diced tomatoes)
  • 4 cups kale, chopped
  • 1 cup quinoa, rinsed
  • 4 cups low-sodium vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Sauté chopped onions until translucent, about 5 minutes. Add minced garlic and cook for an additional 30 seconds.
  2. Transfer the sautéed onions and garlic into the slow cooker. Add diced tomatoes, kale, quinoa, vegetable broth, and Italian seasoning.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until quinoa is tender.
  5. Adjust seasoning with salt and pepper before serving.
