  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 large carrot, chopped
  • 2 stalks celery, chopped
  • 1 can (28 oz) whole or diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup ditalini pasta
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté until softened, about 5 minutes.
  2. Stir in the minced garlic, oregano, and basil. Cook for an additional minute until fragrant.
  3. Pour in the canned tomatoes with their juices and vegetable broth. Mix well.
  4. Add the cannellini beans and pasta. Bring to a gentle boil then reduce heat to simmer.
  5. Simmer uncovered for about 15 minutes until the pasta is al dente.
  6. Adjust seasoning with salt and pepper as needed. Serve hot topped with freshly grated Parmesan cheese if desired.
