  • 2 lbs butternut squash, peeled and diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cinnamon
  • 1 tbsp fresh grated ginger
  • Salt and pepper to taste
  • 1/2 cup heavy cream or coconut milk (optional)

Instructions

  1. Peel and dice the butternut squash into even pieces for uniform cooking.
  2. Sauté the chopped onion in oil over medium heat until translucent, about 5 minutes.
  3. Add the sautéed onions to the crockpot along with butternut squash, minced garlic, ginger, cinnamon, salt, and pepper. Mix well.
  4. Pour in enough vegetable broth to cover the squash mixture.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, blend until smooth using an immersion blender. Stir in cream or coconut milk before serving if desired.
