  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz egg noodles
  • 1 cup heavy cream
  • 1 medium onion, chopped
  • 2 cups low-sodium chicken broth
  • 1 ½ cups sharp cheddar cheese, shredded
  • 2 tsp fresh thyme
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray.
  2. In a large skillet over medium heat, add olive oil. Cook diced chicken until browned and fully cooked (7–10 minutes). Remove from skillet.
  3. Boil water in another pot, add egg noodles, and cook until al dente (5–7 minutes). Drain.
  4. In the same skillet, sauté onions until translucent (3–4 minutes). Add minced garlic and cook for an additional minute.
  5. Stir in heavy cream and chicken broth. Season with thyme, salt, and pepper. Mix in cooked noodles and combine well.
  6. Layer half of the mixture in the baking dish. Sprinkle half of the cheese on top, add the remaining mixture, then top with remaining cheese.
  7. Bake for 25–30 minutes until golden brown and bubbly. Let cool for 5 minutes before serving.
