- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz egg noodles
- 1 cup heavy cream
- 1 medium onion, chopped
- 2 cups low-sodium chicken broth
- 1 ½ cups sharp cheddar cheese, shredded
- 2 tsp fresh thyme
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with nonstick spray.
- In a large skillet over medium heat, add olive oil. Cook diced chicken until browned and fully cooked (7–10 minutes). Remove from skillet.
- Boil water in another pot, add egg noodles, and cook until al dente (5–7 minutes). Drain.
- In the same skillet, sauté onions until translucent (3–4 minutes). Add minced garlic and cook for an additional minute.
- Stir in heavy cream and chicken broth. Season with thyme, salt, and pepper. Mix in cooked noodles and combine well.
- Layer half of the mixture in the baking dish. Sprinkle half of the cheese on top, add the remaining mixture, then top with remaining cheese.
- Bake for 25–30 minutes until golden brown and bubbly. Let cool for 5 minutes before serving.
