  • 16 oz potato gnocchi
  • 1 tsp fresh thyme

Instructions

  1. In a large pot over medium heat, add olive oil and sauté chopped onions until translucent (about 3-4 minutes).
  2. Stir in minced garlic, diced carrots, and celery; cook until soft (about 5 minutes).
  3. Add sliced chicken breasts and cook until no longer pink (5-7 minutes).
  4. Pour in the chicken broth along with thyme, salt, and pepper; bring to a gentle simmer for about 10 minutes.
  5. Toss in the gnocchi; simmer for another 3-4 minutes before stirring in heavy cream.
