- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 cup long-grain white rice
- 6 cups low-sodium chicken broth
- 1 tsp fresh thyme
- 1 bay leaf
- Salt & pepper to taste
- Juice of 1 lemon
Instructions
- Prepare your vegetables by dicing them into uniform pieces.
- In your crockpot, layer the diced chicken breasts at the bottom followed by carrots, celery, garlic, and rice.
- Pour in enough chicken broth to cover the ingredients by about an inch. Add thyme, bay leaf, salt, and pepper; stir gently to combine.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Once cooked, remove the bay leaf and squeeze in fresh lemon juice before serving hot.
