Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 1 cup long-grain white rice
  • 6 cups low-sodium chicken broth
  • 1 tsp fresh thyme
  • 1 bay leaf
  • Salt & pepper to taste
  • Juice of 1 lemon

Instructions

  1. Prepare your vegetables by dicing them into uniform pieces.
  2. In your crockpot, layer the diced chicken breasts at the bottom followed by carrots, celery, garlic, and rice.
  3. Pour in enough chicken broth to cover the ingredients by about an inch. Add thyme, bay leaf, salt, and pepper; stir gently to combine.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Once cooked, remove the bay leaf and squeeze in fresh lemon juice before serving hot.
