- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup frozen potato and cheese pierogi
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups low-sodium vegetable broth
- 8 oz cream cheese, softened
- 2 carrots, sliced
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 cup frozen peas
Instructions
- Chop the onion and mince the garlic. Cut the chicken into bite-sized pieces.
- Place the chicken at the bottom of the crockpot.
- Pour in vegetable broth and add carrots, onions, and garlic.
- Cut cream cheese into cubes and add along with thyme, salt, and pepper.
- Cover and cook on low for 6-8 hours.
- About 30 minutes before serving, add frozen pierogi and peas.
- Serve hot, garnished with parsley if desired.
