  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup frozen potato and cheese pierogi
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 8 oz cream cheese, softened
  • 2 carrots, sliced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 cup frozen peas

Instructions

  1. Chop the onion and mince the garlic. Cut the chicken into bite-sized pieces.
  2. Place the chicken at the bottom of the crockpot.
  3. Pour in vegetable broth and add carrots, onions, and garlic.
  4. Cut cream cheese into cubes and add along with thyme, salt, and pepper.
  5. Cover and cook on low for 6-8 hours.
  6. About 30 minutes before serving, add frozen pierogi and peas.
  7. Serve hot, garnished with parsley if desired.
