  • 2 cans (15 oz each) organic white beans, drained and rinsed
  • 1 cup vegetable broth
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme, chopped
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once shimmering, sauté minced garlic until fragrant (about 1-2 minutes).
  2. Stir in drained white beans and vegetable broth. Bring to a gentle simmer for about 10 minutes.
  3. Using an immersion blender or regular blender, purée half of the soup until creamy while leaving some chunks intact.
  4. Add fresh lemon juice, chopped thyme, salt, and pepper. Simmer for another 5 minutes.
  5. Serve hot in bowls, garnished with parsley and an extra drizzle of olive oil.
