- 2 blood oranges, segmented
- 1 ripe avocado, cubed
- 4 cups fresh kale leaves

Instructions
- Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water. Bring to a boil over medium-high heat. Lower heat, cover, and simmer for 15 minutes until water is absorbed.
- While quinoa cooks, remove stems from kale leaves and chop into bite-sized pieces. Drizzle with olive oil and massage for 1-2 minutes until tender.
- Add blood orange segments and avocado cubes to the bowl with kale.
- Season with salt and pepper to taste. Optionally add nuts or seeds for crunch.
