Ingredients

  • 1 cup quinoa
  • 2 blood oranges, segmented
  • 1 ripe avocado, cubed
  • 4 cups fresh kale leaves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt, to taste
  • Pepper, to taste
  • Optional: ¼ cup toasted almonds or sunflower seeds

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa with 2 cups of water. Bring to a boil over medium-high heat. Lower heat, cover, and simmer for 15 minutes until water is absorbed.
  2. While quinoa cooks, remove stems from kale leaves and chop into bite-sized pieces. Drizzle with olive oil and massage for 1-2 minutes until tender.
  3. Add blood orange segments and avocado cubes to the bowl with kale.
  4. Season with salt and pepper to taste. Optionally add nuts or seeds for crunch.
  5. Once quinoa is cooked, fluff it with a fork and fold into the kale mixture along with lemon juice. Mix well.
