  • 1214 lbs whole turkey
  • 1/4 cup olive oil
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh sage, chopped
  • 1 whole garlic bulb, halved
  • 1 lemon, halved
  • Salt and pepper to taste

Instructions

  1. Remove the turkey from the fridge and let it come to room temperature for 1 hour. Preheat your oven to 325°F (165°C).
  2. In a bowl, mix olive oil with chopped herbs, minced garlic, salt, and pepper.
  3. Stuff the turkey cavity with lemon halves and any leftover herbs.
  4. Rub the herby oil mixture all over the turkey skin and under it.
  5. Place the turkey on a roasting rack in a large pan. Roast for about 13-15 minutes per pound until it reaches an internal temperature of 165°F (75°C), basting halfway through.
  6. Let the turkey rest for at least 20 minutes before carving.
