- 12–14 lbs whole turkey
- 1/4 cup olive oil
- 2 tbsp fresh rosemary, chopped
- 2 tbsp fresh thyme, chopped
- 2 tbsp fresh sage, chopped
- 1 whole garlic bulb, halved
- 1 lemon, halved
- Salt and pepper to taste
Instructions
- Remove the turkey from the fridge and let it come to room temperature for 1 hour. Preheat your oven to 325°F (165°C).
- In a bowl, mix olive oil with chopped herbs, minced garlic, salt, and pepper.
- Stuff the turkey cavity with lemon halves and any leftover herbs.
- Rub the herby oil mixture all over the turkey skin and under it.
- Place the turkey on a roasting rack in a large pan. Roast for about 13-15 minutes per pound until it reaches an internal temperature of 165°F (75°C), basting halfway through.
- Let the turkey rest for at least 20 minutes before carving.
