  • 2 lbs beef sirloin, cut into 1-inch cubes
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium red onion, cut into wedges
  • 1 medium zucchini, sliced thickly
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp lemon juice
  • Salt and black pepper to taste
  • Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, salt, and black pepper. Let the marinade rest for about 10 minutes.
  2. Cut the beef sirloin into 1-inch cubes and chop the vegetables into similar sizes for even cooking.
  3. Place the beef in a resealable bag or bowl and pour the marinade over it. Toss to coat evenly and refrigerate for at least 30 minutes (up to overnight).
  4. Thread the marinated beef and vegetables onto soaked skewers alternately.
  5. Preheat your grill to medium-high heat (about 400°F) and grill the skewers for about 10-15 minutes, turning occasionally until cooked to your desired doneness.
  6. Remove from grill and let rest for a few minutes before serving with fresh lemon wedges.
