- 1 green bell pepper, chopped
- 1 medium red onion, cut into wedges
- 1 medium zucchini, sliced thickly
- 3 tbsp olive oil
- 3 garlic cloves, minced
- ¼ cup low-sodium soy sauce
- 2 tbsp lemon juice
- Salt and black pepper to taste
- Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)
Instructions
- In a bowl, whisk together olive oil, soy sauce, lemon juice, minced garlic, salt, and black pepper. Let the marinade rest for about 10 minutes.
- Cut the beef sirloin into 1-inch cubes and chop the vegetables into similar sizes for even cooking.
- Place the beef in a resealable bag or bowl and pour the marinade over it. Toss to coat evenly and refrigerate for at least 30 minutes (up to overnight).
- Thread the marinated beef and vegetables onto soaked skewers alternately.
