  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (light)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Zest of 1 lemon
  • 2 tbsp fresh lemon juice
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter in a medium bowl and allow it to cool slightly.
  3. In another bowl, whisk together granulated sugar and brown sugar with melted butter.
  4. Beat in the eggs one at a time along with vanilla extract until creamy.
  5. Gradually mix in oats, flour, baking soda, salt, lemon zest, and lemon juice until just combined.
  6. Drop tablespoon-sized portions onto lined baking sheets about 2 inches apart.
  7. Bake for 10-12 minutes until golden around the edges but soft in the center.
  8. Cool on the sheet briefly before transferring to wire racks.
