  • 1 cup pumpkin puree (not pie filling)
  • 1 cup low-sodium chicken broth
  • 1/2 cup heavy cream or coconut milk
  • Fresh sage leaves, for garnish

Instructions

  1. In a large bowl, mix together ground turkey, breadcrumbs, Parmesan cheese, garlic, onion, egg, salt, and pepper until just combined.
  2. Form the mixture into 1-inch meatballs and place them on a parchment-lined baking sheet.
  3. Heat olive oil in a skillet over medium heat and cook the meatballs until browned on all sides (about 5–6 minutes). Set aside.
  4. In the same skillet, add pumpkin puree and chicken broth; stir until smooth and season with salt and pepper.
  5. Stir in cream or coconut milk and fresh sage leaves; simmer on low heat.
  6. Return meatballs to the skillet; cover and simmer for an additional 10–15 minutes until heated through.
