  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 medium carrots, thinly sliced
  • 2 green onions, chopped (for garnish)
  • 8 oz Lo Mein noodles
  • 1/2 cup low-sodium soy sauce
  • 2 tbsp sesame oil
  • 1 cup low-sodium chicken broth
  • 2 tbsp light brown sugar
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)

Instructions

  1. Gather and prep all ingredients: chop vegetables and mince garlic.
  2. Place chicken breasts in the bottom of the crockpot.
  3. In a bowl, whisk together soy sauce, sesame oil, chicken broth, brown sugar, and cornstarch slurry until smooth.
  4. Pour sauce over chicken and evenly add chopped vegetables on top.
  5. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  6. Near the end of cooking time, prepare Lo Mein noodles according to package instructions until al dente.
  7. Shred chicken in the crockpot using two forks and fold in cooked noodles until well-combined.
