  • 4 boneless, skinless chicken breasts
  • 1 package (6 oz) stuffing mix
  • 2 cups low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 1 cup diced celery
  • 1 tsp dried thyme
  • 1 tsp dried sage
  • 4 tbsp butter, melted
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, melt 2 tbsp of butter. Sauté chopped onions and diced celery until translucent (about 5 minutes).
  3. In a large bowl, combine the sautéed vegetables with the stuffing mix. Gradually stir in chicken broth until moistened.
  4. Spray a baking dish with cooking spray. Place seasoned chicken breasts at the bottom and top with stuffing mixture.
  5. Cover with aluminum foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until golden brown.
  6. Allow to rest for 10 minutes before serving.
