  • 1 large egg
  • 1/2 cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy. Add pumpkin puree, egg, and vanilla extract; mix until smooth.
  3. In another bowl, whisk flour, baking soda, cinnamon, nutmeg, and salt. Gradually fold into the wet mixture until just combined.
  4. Drop rounded tablespoons of dough onto prepared baking sheets. Bake for 12-15 minutes until edges are golden but centers remain soft.
  5. Allow cookies to cool for 5 minutes on baking sheets before transferring them to wire racks.
  6. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar and milk until desired consistency is reached; stir in cinnamon.
  7. Once cooled, frost each cookie generously with the cinnamon frosting.
