  • 2 medium zucchinis (spiralized)
  • 1/2 cup natural peanut butter
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons freshly squeezed lime juice
  • 1 thumb-sized piece of fresh ginger (grated)
  • 3 garlic cloves (minced)
  • 1 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1 tablespoon oil (for sautéing)
  • Fresh cilantro leaves (to taste)
  • 1/4 cup chopped toasted peanuts

Instructions

  1. Slice the chicken breasts into bite-sized pieces and season with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5-7 minutes.
  3. In a bowl, whisk together peanut butter, soy sauce, lime juice, ginger, garlic, and red pepper flakes until smooth.
  4. Add spiralized zucchini to the skillet with cooked chicken and stir gently for about 3-4 minutes until slightly softened.
  5. Pour the peanut sauce over the chicken and zoodles, tossing to coat evenly.
