  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 1 cup red lentils (200g), rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 cup breadcrumbs (100g)
  • 3 tbsp olive oil, divided
  • Salt and pepper to taste

Instructions

  1. In a saucepan, combine rinsed lentils with 2 cups water. Bring to a boil, reduce heat, and simmer until tender (about 15 minutes).
  2. Boil cubed sweet potatoes in salted water until fork-tender (about 10-12 minutes). Drain.
  3. In a skillet over medium heat, heat 1 tbsp olive oil. Add chopped onion and minced garlic; sauté until translucent (about 5 minutes).
  4. In a large bowl, mash cooked sweet potatoes with lentils. Stir in sautéed onions, garlic, cumin, salt, pepper, and breadcrumbs until well combined.
  5. Shape mixture into patties about 3 inches wide; place on parchment-lined baking sheet.
  6. Heat remaining olive oil in the skillet over medium heat. Fry patties until golden brown on both sides (about 4-5 minutes per side).
