- 4 boneless, skinless chicken breasts
- 1 cup long-grain rice
- 1 cup queso blanco, shredded
- ¼ cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tsp cumin
- 2 tsp chili powder
- 1 tbsp soy sauce (low-sodium)
- 1 cup bell peppers, chopped (any color)
- 4 garlic cloves, minced
- 2 cups chicken broth (low-sodium)
Instructions
- In a bowl, whisk together lime juice, soy sauce, cumin, chili powder, garlic, and cilantro to create the marinade.
- Place chicken breasts in a resealable bag and add the marinade. Seal tightly and marinate for at least 30 minutes.
- In a large pot over medium heat, sauté bell peppers until softened. Add rice and toast for a minute before adding chicken broth.
- Nestle marinated chicken into the rice mixture and cover. Cook on low heat for about 20-25 minutes until liquid is absorbed and chicken is cooked through.
- During the last 5 minutes of cooking, sprinkle shredded queso blanco over the top and cover until melted.
- Garnish with fresh cilantro and an extra squeeze of lime juice before serving.
