Description

Pollo Loco is a delightful Mexican Chicken Rice dish that combines tender marinated chicken, fluffy rice, and creamy queso for a flavor explosion. Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain rice
  • 1 cup queso blanco, shredded
  • ¼ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tbsp soy sauce (low-sodium)
  • 1 cup bell peppers, chopped (any color)
  • 4 garlic cloves, minced
  • 2 cups chicken broth (low-sodium)

Instructions

  1. In a bowl, whisk together lime juice, soy sauce, cumin, chili powder, garlic, and cilantro to create the marinade.
  2. Place chicken breasts in a resealable bag and add the marinade. Seal tightly and marinate for at least 30 minutes.
  3. In a large pot over medium heat, sauté bell peppers until softened. Add rice and toast for a minute before adding chicken broth.
  4. Nestle marinated chicken into the rice mixture and cover. Cook on low heat for about 20-25 minutes until liquid is absorbed and chicken is cooked through.
  5. During the last 5 minutes of cooking, sprinkle shredded queso blanco over the top and cover until melted.
  6. Garnish with fresh cilantro and an extra squeeze of lime juice before serving.
