  • 3 cloves fresh garlic, minced
  • 1 cup bell peppers, diced (various colors)
  • 1 medium yellow onion, chopped
  • 1 cup jasmine rice
  • 2 cups low-sodium chicken broth
  • 1 cup queso blanco
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Dice chicken into bite-sized pieces. Chop garlic, onion, bell peppers, and cilantro.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned (about 5-7 minutes).
  3. Add garlic, onion, and bell peppers; sauté for about 3-4 minutes until onions are translucent.
  4. Stir in cumin and chili powder; add rice and toast for 2 minutes.
  5. Pour in chicken broth; bring to a boil, cover, and simmer for 15-20 minutes until rice is cooked.
  6. Stir in queso blanco until melted. Garnish with cilantro before serving.
