  • 34 boneless, skinless chicken breasts (about 1 pound)
  • 2 cups fresh spinach, chopped
  • 8 oz low-fat cream cheese
  • 1/2 cup Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 package (17.3 oz) puff pastry sheets (2 sheets)
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Boil chicken breasts in water for about 15-20 minutes until cooked through. Let cool and shred.
  3. In a bowl, mix shredded chicken with cream cheese, Greek yogurt, spinach, garlic powder, onion powder, lemon juice, salt, and pepper until well combined.
  4. Roll out thawed puff pastry on a floured surface and cut into squares or circles.
  5. Place a generous amount of filling in the center of each pastry piece. Fold over edges and seal tightly.
  6. Arrange filled puffs on a parchment-lined baking sheet and bake for 15-18 minutes until golden brown.
