- 3–4 boneless, skinless chicken breasts (about 1 pound)
- 2 cups fresh spinach, chopped
- 8 oz low-fat cream cheese
- 1/2 cup Greek yogurt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 package (17.3 oz) puff pastry sheets (2 sheets)
- Salt and pepper to taste
- Juice of 1 lemon
Instructions
- Preheat your oven to 400°F (200°C).
- Boil chicken breasts in water for about 15-20 minutes until cooked through. Let cool and shred.
- In a bowl, mix shredded chicken with cream cheese, Greek yogurt, spinach, garlic powder, onion powder, lemon juice, salt, and pepper until well combined.
- Roll out thawed puff pastry on a floured surface and cut into squares or circles.
- Place a generous amount of filling in the center of each pastry piece. Fold over edges and seal tightly.
- Arrange filled puffs on a parchment-lined baking sheet and bake for 15-18 minutes until golden brown.
