  • 3 cloves fresh garlic, minced
  • 1 cup creamy peanut butter
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp brown sugar
  • 1 tsp red pepper flakes (adjust to taste)
  • 1/4 cup chopped peanuts (for garnish)

Instructions

  1. Trim any excess fat from the chicken breasts and place them in the bottom of the crockpot.
  2. In a bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and red pepper flakes until smooth.
  3. Pour the sauce over the chicken in the crockpot, ensuring all pieces are well-coated.
