  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 medium onion, diced
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil. Season chicken with salt and pepper; cook for about 5 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté onions and garlic until fragrant. Add spinach and stir until wilted.
  4. Pour in heavy cream and add grated Parmesan; simmer for 3-4 minutes until slightly thickened.
  5. Cut chicken into bite-sized pieces and mix back into the sauce. Transfer to the greased baking dish.
  6. Cover with foil and bake for 25 minutes; remove foil during the last 10 minutes to achieve a golden top.
