- 2 cups fresh broccoli florets
- 1 cup long-grain jasmine rice
- 1 ½ cups shredded cheddar cheese
- 3 garlic cloves, minced
- 2 cups low-sodium chicken broth
- 2 tbsp olive oil
- Salt & pepper to taste
- 1 tsp smoked paprika
- 1 tsp dried oregano
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced chicken breasts seasoned with salt and pepper. Cook until browned and no longer pink in the center, about 5-7 minutes.
- Stir in minced garlic and broccoli florets; sauté for about 2 minutes until fragrant.
- Add jasmine rice, chicken broth, paprika, and oregano. Stir well and bring to a boil.
- Lower heat, cover the skillet, and let simmer for about 15 minutes or until rice is tender.
- Remove the lid, sprinkle shredded cheese on top, cover again until melted (around 3-4 minutes). Serve hot.
