- 3 cloves fresh garlic, minced
- 2 tsp fresh ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 cup full-fat coconut milk
- 2 tbsp unsalted butter
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Cut chicken into bite-sized pieces and season with salt and pepper.
- In a skillet, cook the chicken over medium heat until golden brown. Remove from skillet and set aside.
- In the same skillet, melt butter and sauté garlic and ginger until fragrant.
- Add diced tomatoes and coconut milk; simmer until thickened.
- Stir in spices (cumin, coriander, turmeric) and return the chicken to the pan.
