  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 tsp fresh ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 cup full-fat coconut milk
  • 2 tbsp unsalted butter
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. In a skillet, cook the chicken over medium heat until golden brown. Remove from skillet and set aside.
  3. In the same skillet, melt butter and sauté garlic and ginger until fragrant.
  4. Add diced tomatoes and coconut milk; simmer until thickened.
  5. Stir in spices (cumin, coriander, turmeric) and return the chicken to the pan.
  6. Simmer everything together for another 10 minutes until heated through.
  7. Garnish with chopped cilantro and serve hot over rice or with naan.
