  • ½ tsp nutmeg
  • ½ tsp salt
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
  3. Add eggs one at a time, mixing well after each addition. Slowly incorporate apple cider until combined.
  4. In another bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt. Gradually mix into the wet ingredients until just combined.
  5. If desired, fold in walnuts or pecans.
  6. Drop tablespoon-sized portions of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes until edges are golden but centers remain soft.
  8. Let cool on sheets for 5 minutes before transferring to wire racks to cool completely.
