  • 1 ½ tsp baking powder
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • ½ cup champagne or sparkling wine
  • 1 cup fresh raspberries (or thawed frozen)
  • 1 cup heavy cream
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line cupcake tins with paper liners.
  2. In a bowl, mix flour and baking powder; set aside.
  3. In another bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add champagne until just combined.
  5. Gently fold in raspberries.
  6. Spoon batter into liners, filling two-thirds full. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. For the frosting, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla until fluffy.
