  • 1 medium yellow onion, chopped
  • 2 bell peppers (red or green), chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, sliced jalapeños

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onions and bell peppers; sauté until softened (about 5 minutes).
  2. Stir in minced garlic for about 1 minute until fragrant. Add ground turkey; cook until browned, breaking up lumps.
  3. Mix in chili powder, cumin, salt, and pepper. Add diced tomatoes with their juices; stir well.
  4. Gently fold in kidney beans. Bring the mixture to a simmer over low heat; cook for at least 30 minutes to meld flavors.
  5. Taste and adjust seasoning as needed. Serve warm, topped with cheese or sour cream if desired.
