  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups sweet corn (fresh or frozen)
  • 2 cups Yukon Gold potatoes (diced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream or whole milk
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and dicing the potatoes.
  2. In a skillet, sauté the onion over medium heat until translucent (about 5 minutes).
  3. Place chicken breasts in the bottom of the crockpot. Add corn, potatoes, garlic, broth, thyme, paprika, salt, and pepper. Stir gently to combine.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. About 30 minutes before serving, stir in heavy cream or milk for creaminess.
  6. Shred the chicken directly in the pot using two forks before serving.
