  • 1214 lb whole turkey
  • 1 cup unsalted butter, softened
  • 3 tbsp fresh rosemary, chopped
  • 3 tbsp fresh thyme, chopped
  • 3 tbsp fresh sage, chopped
  • 5 cloves garlic, minced
  • 1 lemon, halved
  • 2 cups onion, chopped
  • 2 cups carrots, chopped
  • 2 cups celery, chopped
  • 4 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Rinse the turkey under cold water and pat dry with paper towels.
  3. In a bowl, mix softened butter with minced garlic and herbs. Rub this mixture all over the turkey, including under the skin.
  4. Stuff the cavity with halved lemons and extra herbs.
  5. Scatter chopped onions, carrots, and celery in the roasting pan.
  6. Place the turkey breast-side up on top of the vegetables. Roast for approximately 13 minutes per pound until it reaches an internal temperature of 165°F (74°C). Baste occasionally with pan juices.
