- 4 garlic cloves, minced
- 2 tsp ground cumin
- 2 tsp dried oregano
- 2 chipotle peppers in adobo sauce, chopped
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Prepare your ingredients: Chop the onion and mince the garlic.
- Sear the pork: Set your Instant Pot to 'Sauté' mode. Add olive oil and sear the pork on all sides until golden brown (about 4-5 minutes per side).

- Mix spices: Add cumin, oregano, chipotle peppers, orange juice, lime juice, salt, and pepper. Stir well.
- Pressure cook: Lock the lid and set to 'Manual' on high pressure for 60 minutes. Allow a natural release for 10 minutes before quick-releasing any remaining pressure.
- Shred and crisp: Remove pork from the pot and shred with two forks. Spread shredded meat on a baking sheet and broil for about 5 minutes until edges are crispy.
