  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 can (15 oz) garbanzo beans, rinsed and drained
  • 2 tbsp extra virgin olive oil (divided)
  • 2 cups mixed colorful vegetables (bell peppers, spinach)
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp salt (adjust to taste)
  • Juice of 1 lemon
  • 1 cup Greek yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp honey

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix 1 tablespoon olive oil with cumin, paprika, salt, and pepper. Coat chicken breasts generously.
  3. On another baking sheet, toss garbanzo beans with remaining olive oil and salt. Roast both the chicken and garbanzos for about 25-30 minutes until golden brown and crispy.
  4. While they roast, chop the vegetables and sauté in olive oil until tender but still crunchy.
  5. In a small bowl, combine Greek yogurt, Dijon mustard, and honey until smooth.
  6. Assemble bowls by placing crispy garbanzo beans at the bottom, followed by sliced chicken and sautéed veggies. Drizzle with sauce and squeeze fresh lemon juice over the top.
