  • 3 cloves garlic, minced

  • 2 medium carrots, diced
  • 2 celery stalks, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh lime juice (about 2 limes)
  • 6 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by chopping the chicken into bite-sized pieces and dicing the onion, garlic, carrots, and celery.
  2. In a large pot over medium heat, heat olive oil until shimmering. Add onions and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic along with cumin and chili powder; cook for another minute.
  4. Add the chicken pieces and cook until no longer pink (5-7 minutes).
  5. Pour in chicken broth along with chopped carrots and celery; bring to a gentle boil before reducing heat to simmer for 15-20 minutes.
