  • 1 lb Brussels sprouts, trimmed and halved
  • 1 cup quinoa, rinsed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup feta cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C). Rinse the quinoa under cold water.
  2. Toss the Brussels sprouts with olive oil, garlic powder, salt, and pepper in a baking sheet.
  3. Roast for 20-25 minutes until golden brown.
  4. In a medium saucepan, cook rinsed quinoa with double the amount of water until fluffy (about 15 minutes).
  5. In a large bowl, combine roasted Brussels sprouts, cooked quinoa, and chickpeas. Squeeze fresh lemon juice over the mixture.
  6. Top with crumbled feta if desired.
