  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 2 tsp ground cumin
  • 10 corn tortillas
  • 1 cup shredded Monterey Jack cheese
  • ½ cup vegetable oil (for frying)
  • ½ cup sour cream
  • ½ cup salsa (mild or spicy)

Instructions

  1. Preheat oven to 375°F (190°C). Boil chicken breasts in salted water with garlic until tender (15-20 minutes). Shred the chicken.
  2. In a skillet, heat oil over medium heat. Sauté onion and garlic until translucent.
  3. Add shredded chicken, cumin, and cheese to the skillet; stir until well combined and heated through.
  4. Warm corn tortillas in a skillet until pliable. Spoon filling onto each tortilla and roll tightly.
  5. Heat oil in a pan over medium-high heat. Fry taquitos seam-side down until golden brown on all sides (3-4 minutes per side).
